Hand-forged Hisamasa knife with a nice, thin grind and tall blade. In Japan, the nakiri knife shape is specifically made for cutting vegetables. The straight blade and tall blade make it easy to cut lettuce, squash, melons, carrots and tomatoes, despite its shorter length.

This second-hand knife has been thoroughly upcycled. It has new custom handle made out of reclaimed ash and an off-cut piece of mahogany. The bevels of the knife has been thinned and polished, using a series of whetstones, exposing the lamination between the core steel and the cladding.

Important: Since it’s carbon steel, not stainless, the knife may patina and potentially rust if not kept dry. Due to its thin grind, it is not recommended to cut frozen foods or meat with bone, as it may chip the edge. Please use a spoon to get rid of the avocado stone
